One of the perfect soup for Health conscious folks and good for weight loss too, though Tomato soup is easily available in markets in cans or sachets, it’s best to gorge on homemade soup. Market based soups contains lots of additional calories and are not as nutritious as the homemade. So if you want to eat healthy then its best to stick to homemade soups and yes , its quite wonderful in taste and you would have no reason now to reach out to those canned soups from supermarkets..

Ingredients
- 600g Firm Tomatoes
- 4 Garlic Cloves
- 1-2 Tbsp Extra Virgin Olive Oil
- 1 Teaspoon Salt Or To Taste
- 1 Teaspoon Pepper Or To Taste
- 1/4 Cup Packed Basil Leaves
- 1 Cup Low Sodium Veg Broth
- 1/2 Teaspoon Oregano
- 2 Tbsp Corn Slurry Or Low Fat Coconut Milk Optional
Steps to Cook
- Preheat oven to 180 deg and line baking tray with parchment paper
- Slice tomatoes and garlic cloves into halves. Add them to bowl. Season them with salt pepper and olive oil
- Spread them on baking tray and roast for 40-45 minutes
- Allow to cool for 15 minutes
- Blend tomatoes and garlic cloves until mixture is smooth
- Add basil leaves and blend well
- Add these mixture to deep bottom vessel
- Add oregano, salt and veg broth. Mix well
- Cook over low medium heat for 15 minutes
- If you wish to have creamier soup ,add corn slurry now. If you wish to add coconut milk or low fat cream, then add them towards the end of the cooking. This is entirely optional step. If adding it, mix well and cook for another 5 minutes
- You can always add any other seasonings as desired in this soup
- Serve hot. I have used chia seeds to garnish. If you wish to have richer taste , you can add butter too
