Bored of the traditional Apple pies or no bake chocolate pies?? Then this summer , its time to gorge on luscious mango in the form of pies. So if you are not in a mood to bake then this is one of the perfect dish for you
Delicious creamy mango pie, this can be easily made and requires no baking or cooking. This is one of the perfect cold mouth watering dessert especially if you are a hard core mango lover like me.This is absolutely simple and no fuss dish, yet such delicious in taste. All the ingredients mentioned are easily available in our pantry. You can use any cookies for the crust as desired. Enjoy the taste of mango in every bite and share your experience once you prepare it
*Substitute powdered agar-agar for gelatin in equal amounts. If using flakes then, 1 Tbsp. of agar-agar flakes is equal to 1 tsp. of agar-agar powder.
Preparation Time: 5 hours Servings : 7-8
Ingredients
- 2-3 ripe mangoes chopped
- 4 tbsp condensed milk
- 120 ml whipping cream
- 1/2 cup icing sugar
- 1 tsp vanilla extract
- 2.5 tsp Gelatin
- 3 tbsp cold water
For Crust
- 1.5 cups digestive biscuits crumbs
- 7 tbsp melted butter
- 4 tbsp powdered sugar
For Garnish
- 1/4 cup or more chopped mango pieces
- Additionally nuts/tutti fruitti or cream – garnish of your choice
Steps to Cook
Mix biscuits crumbs, sugar and melted butter well. Grease a pie dish, add mixture to the dish and level evenly on bottom and sides of the dish

Chill this crust for 30 minutes
Sprinkle gelatin over cold water and rest for 5-10 minutes until spongy

Microwave or over low heat dissolve Gelatin. Stir until dissolved completely

Blend mangoes with condensed milk to form smooth puree. It should be 1 cup so adjust the quantity of mangoes. Adjust quantity of condensed milk as per sweetness of mangoes. Its best to use sweet ripened Mangoes.
Now add gelatin to mango puree and mix well
Whip Cream with icing sugar to form soft peaks. Add vanilla extract and blend

Add mango puree to cream and blend until well combined

Slowly spoon the above mixture to chilled pie crust and level evenly. Cover the pie and refrigerate for 4 hours until set

Detach the bottom of the pie dish and transfer the pie to serving plate. Garnish with chopped mangoes and additional garnishing of your choice. Warm up the knife by passing through flame for few seconds, now slice the pie with hot knife and serve…
