I have made various types of cookies in last 2 years when I decided to replace regular flour with cornstarch, it took 2 tries for me to get the ingredients right, the outcome was worth it. The idea of using cornstarch to make the cookies came when I was baking nankatai. I have skipped leavening agents for this cookies and did not find it necessary

Soft addictive cookies, easy to make and infused with flavor of Cardamom makes this one of the must try cookies. These are real melt in mouth cookies, though you can add in other spices but Cardamom makes this cookie so yummilicious that we all finished it in single go. Do use weighing scale to measure out the ingredients and I am sure this will turn out to be perfect.

Ingredients

  • 120 g soft unsalted butter
  • 250 g Cornstarch
  • 100 g Sugar
  • 1 teaspoon Cardamom powder
  • 1 egg
  • 1 teaspoon Vanilla extract
  • 1/8 teaspoon salt
  • 1-2 drops of any Food coloring – optional

Steps to Cook

  • In a bowl , mix cornstarch, salt and cardamom powder. Keep it aside
  • In a seperate bowl, blend butter and sugar for 4-5 minutes, this is very important step. Do not reduce the time duration
  • Add egg and blend until pale and frothy
  • Add vanilla extract and food colouring. Mix well. If you do not wish to add food colors, you can skip adding it
  • Now add in dry ingredients and knead to form soft dough. Even if dough is lightly sticky it’s ok
  • Wrap dough in cling wrap and refrigerate for 1 hour. I always recommend baking cookies from cold dough
  • Preheat oven to 180 and line baking tray with parchment paper
  • Make small balls of dough and slightly flatten it. Place on baking tray leaving gap between them. Using knife, I have cross at the centre, you can make any designs or skip it
  • Bake for 10 minutes until firm. Do not over bake
  • Allow to cool for 15 minutes and then cool on wire rack completely
  • Store in airtight container. Munch on them as required
