Kachumbar or Kachumber is simple Veg salad which is often served as side dish along Indian curries and gravies. Since this is made from all fresh veggies , this salad is packed with nutrients and easy to make. The addition of red chili powder and chat masala brings in flavor so now healthy need not be boring. Here you can play around with dressing to suit your tastes. You can also add or change veggies of your choice. You should not grated veggies in this salad as it will release water and make salad soggy

Preparation time : 10 mins Servings: 4

Ingredients

  • 1  Cucumber peeled and sliced lengthwise thinly
  • 1/2 Capsicum sliced lengthwise thinly
  • 2 Tomatoes De-seeded and thinly sliced lengthwise
  • 1 carrot sliced lengthwise thinly
  • 1 medium Onion thinly sliced
  • 1 tbsp Lemon Juice
  • 1/4 teaspoon Rock Salt
  • 1/4 teaspoon Chat Masala
  • 1/4 teaspoon Red Chili Powder – adjust quantity
  • 1/4 teaspoon Salt or to taste
  • 1-2 tbsp Chopped Coriander Leaves (Cilantro)

Steps to prepare

  • I always like to keep onions in water for 15 minutes to reduce its overpowering taste. Drain excess water after 15 mins. This is optional step
  • Add Onions, Cucumber, Tomatoes, Carrots and Capsicum in a bowl
  • Add Salt and red chili powder with chat masala. In case you do not have Chat masala, you can sprinkle little amchur powder or pomegranate powder or use tamarind pulp
  • Toss well. Add lemon juice and mix well
  • Garnish with chopped coriander leaves.
  • Rest aside for 15-30 minutes
  • Serve as is or with any main course food
