Moist and perfectly spiced cake,not just for kids, perfect for adults too. This cake can be also made during Easter season. This is infact one of my favorite cake. Frosted with cream cheese, this cake tastes awesome. Due to presence of the spices, the kitchen smells heavenly while baking, I could not wait to gorge on this cake myself

The recipe here will lead you to perfectly moist spiced delicious cake. Do use weighing scale to measure out ingredients and you cannot go wrong with this cake

Servings: 8

Ingredients

For cake

  • 310 g Flour
  • 200 g white Sugar
  • 200 g brown Sugar
  • 1 Tablespoon vanilla extract
  • 4 eggs at room temperature
  • 3 cups grated Carrots
  • 1 teaspoon Salt
  • 2 teaspoons ground Cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger powder
  • 1 1/2 teaspoon Baking Soda
  • 1 teaspoon baking powder
  • 235 ml Oil
  • 110 g unsalted butter, melted
  • 120 g chopped Walnuts – optional

For Frosting

  • 220 g Cream cheese at room temperature
  • 110 g soft unsalted butter
  • 450 g powdered sugar
  • 1/4 teaspoon Salt
  • 1 teaspoon vanilla extract

Steps to prepare

  • Preheat oven to 170 and prepare two 8-inch pans with parchment paper
  • In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg
  • Add oil and melted butter and blend well
  • Add eggs, one at a time and blend well for 30 sec after adding each egg
  • Add vanilla extract and blend well
  • Add carrots and nuts (optional), mix well
  • Evenly divide carrot cake batter into prepared baking pans and bake for 30-40 minutes until done (toothpick inserted in center should come out mostly clean with only few moist crumbs)
  • Allow carrot cake to cool in the pans for 10 minutes, then invert onto cooling rack to cool completely.
  • I have sliced the top layer of the cake for frosting to even the surface, this is optional
  • Combine butter and cream cheese in a large bowl and beat until creamy, well-combined, and lump-free.
  • Add vanilla extract and sprinkle salt into the bowl and stir well to combine.
  • Gradually add powdered sugar and blend until ingredients are completely combined and the consistency is thick. Always add 1/2 cup powdered sugar at a time, blend and then add next batch. Never add all sugar at once
  • Now place the first cake on serving board and frost evenly on top
  • Place second cake on top and frost on top and sides. I had divided the frosting to make carrot design on top. Frost and design as desired.
  • Refrigerate until ready to serve. Now slice and serve this delicious cake
