This is a Malabar special rice which tastes best with Chicken , Mutton curry or any Coconut based curries and there is never reason required to gorge on this delicious rice. Whenever I am in rush and my kid wants change from regular rice, this is one of my go-to recipes. This is easy, simple to make, aromatic, infused with ghee and delicious in taste
You can also make this with left over rice, this is easier way to use leftover rice too. The beautiful part is you can add veggies too to this rice and make it even more nutritious and delicious.

Ingredients
- 3/4 cups Basmati Rice / Kaima rice
- 1/2 cup thinly sliced Onions
- 1.5 cups Water
- 3 tbsp ghee/Clarified butter
- 1/2 tbsp Raisins
- 6 Cashews
- Salt to taste
- 1-2 Cloves
- 2 Green Cardamom
- 1/4 tsp Ginger grated
- 1 Bay Leaf
- 1/2 inch Cinnamon
- 2 tbsp Coriander leaves to garnish
Steps to prepare
- Clean and soak rice for 30 minutes. Drain excess water and keep it aside
- Heat 2 tbsp ghee in a pan

- Now fry cashews until golden brown, take it out and keep it aside

- Now add raisins and saute until puffed up

- Drain and keep it aside

- Now add the onions in same pan.

- Saute onions until crisp and brown. Drain and remove the onions. Keep it aside

- Add 1 tbsp ghee in same pan

- Add all whole spices (bay leaf, cloves, cinnamon, cardamom) with ginger and saute until aromatic

- Add rice to the pan

- Saute rice for 3-4 minutes over medium heat

- Add water with salt and mix well. Water should be slightly salty

- Simmer, cover and cook until water is absorbed and rice is done

- Gently fluff the rice with fork without breaking the grains

- Garnish the rice with fried cashews, onions, raisins and coriander leaves.

- Serve warm with curry and raita
