One of my favourite and most popular payasam/ kheer from Kerala and served during feasts and festival is Ada payasam or Paladda. This is common delicacy prepared during festivals. Creamy rich , slighly pink, I never seem to get enough of this delightful dessert

Preparation time: 5 mins Cooking time: 48 mins Total time: 53 mins

Servings: 3

Ingredients

  • 750 ml full fat milk
  • 1/2 cup sugar adjust
  • 50 -55 gm Ada
  • 1/4 teaspoon cardamom
  • 1 tbsp cashews
  • 1 teaspoon ghee
  • 1 teaspoon raisins optional

Steps to Cook

  • Heat milk in deep bottom vessel and bring to boil stirring occasionally
  • Once milk starts boiling, add ada
  • Add sugar to milk
  • Mix well, reduce heat to low and cook stirring occasionally
  • Do stir occasionally and it takes around 40-45 minutes to cook
  • Cook until milk has reduced to half and has thickened. Paladda on cooking gets light rose hue
  • Add cardamom powder and mix well. Switch off
  • Heat ghee in small vessel and fry cashews until golden brown
  • Pour the fried cashews in payasam and mix well
  • Serve warm or cold as desired
