One of my favourite and most popular payasam/ kheer from Kerala and served during feasts and festival is Ada payasam or Paladda. This is common delicacy prepared during festivals. Creamy rich , slighly pink, I never seem to get enough of this delightful dessert

Ingredients
- 750 ml full fat milk
- 1/2 cup sugar adjust
- 50 -55 gm Ada
- 1/4 teaspoon cardamom
- 1 tbsp cashews
- 1 teaspoon ghee
- 1 teaspoon raisins optional
Steps to Cook
- Heat milk in deep bottom vessel and bring to boil stirring occasionally

- Once milk starts boiling, add ada

- Add sugar to milk

- Mix well, reduce heat to low and cook stirring occasionally

- Do stir occasionally and it takes around 40-45 minutes to cook
- Cook until milk has reduced to half and has thickened. Paladda on cooking gets light rose hue

- Add cardamom powder and mix well. Switch off

- Heat ghee in small vessel and fry cashews until golden brown

- Pour the fried cashews in payasam and mix well

- Serve warm or cold as desired
