Schezwan Fried Rice is one of the most popular, easy to prepare, Spicy , delicious Indo-Chinese dish. This also happens to be both my kid and my favorite rice dish. Since my kid is a fussy eater , I prepare most of these rice dishes to make him eat his veggies along with rice

This is often served along with Manchurian gravy. Perfectly flavored with garlic and Schezwan sauce, this hot spicy delicious Veg rice can be consumed as-is without any side dishes

Preparation time: 35 mins Cooking time: 20 mins Total time: 55 mins

Servings: 3

Ingredients:

  • 1 cup Basmati/Long grain rice
  • Salt to taste
  • 4 cups water
  • 1 tbsp oil
  • 2 tbsp sesame oil
  • 2-3 spring onion finely chopped into whites and greens separately
  • 1 tbsp finely chopped garlic
  • 1/4 cup finely chopped cabbage
  • 1/4 cup finely chopped bell peppers
  • 1 small carrot finely chopped
  • 3-4 tbsp capsicum finely chopped
  • 3 tbsp french beans finely chopped
  • 3-4 tbsp Schezwan sauce – adjust as per taste (homemade/store-brought)
  • 1.5 tbsp vinegar
  • 1 tbsp tomato chili sauce – optional
  • 1 tbsp soy sauce – optional
  • Salt and pepper to taste

Steps to prepare

  • Clean and soak rice for 30 minutes. Drain excess water and keep it aside
  • Heat water in a vessel
  • Add 1 tbsp oil and salt
  • Bring water to boil
  • Add the drained rice and mix well
  • Cook until rice is al dente, it should be only 90% cooked
  • Drain excess water immediately to prevent further cooking of the rice
  • Rinse through cold water, this will prevent rice grains sticking.
  • Once rice is cooled and drained, refrigerate for 30 minutes. This will give perfect texture to rice
  • Heat sesame oil in a pan, You can use regular veg oil but sesame oil adds right flavor to the dish
  • Add garlic and white part of spring onions with little green onions. Saute for 2-3 minutes
  • It’s advisable to use blanched french beans to prevent the raw taste once rice is done, in case you wish to skip it, you can. If you want to use it then, add them to pan now
  • Saute for 2-3 minutes

Add all veggies and mix well.Saute until they are tender yet crunchy

  • Add salt and pepper. Mix well
  • Mix all sauces in a bowl,you can skip the other sauces and add only schezwan sauce but the addition of other sauces renders the right taste to the dish
  • Add the sauces to the pan and mix well
  • Add vinegar and mix well
  • Let the sauces bubble nicely over high heat
  • Now add in the rice
  • Gently mix without breaking the grains until rice is well coated with sauces
  • Keep on tossing on high flame for 2-3 mins and adjust the seasonings if required
  • Garnish with chopped Spring Onion greens and serve this spicy hot dish as is or with any Manchurian gravy
