Akki Roti which also means “Rice flatbread” is one of the famous flatbread from Karnataka. This is usually served either for breakfast or lunch as per choice. Rich in fibre and carbs, its very filling . Simple to prepare and nutritious, this is usually served with chutney/pickle or gravy. They are also sometimes served as snacks along with hot cup of tea. They do taste delicious as-is. The addition of veggies makes this flatbread even more healthier

Ingredients
- 1 cup Rice Flour
- 1 red Onion, finely chopped
- 1 green Chili, finely chopped
- 1 inch Ginger, finely chopped
- 3 tbsp chopped Coriander leaves
- 1 teaspoon Jeera (Cumin seeds)
- 1/2 Carrot, grated
- Salt to taste
- Water as required
- Oil/Ghee to Drizzle
Steps to prepare
- In a bowl, mix onions, carrot, cumin seeds, salt ,coriander leaves ginger, green chili
- Add rice flour and mix until the mixture is crumbly

- Add required water and knead into a smooth soft dough

- On a greased foil/leaf, place a small portion of the dough and with wet palms roll into thin roti. Make small hands with index finger on roti. This will help in even and ease in cooking roti.

- Gently place the foil upside down on the hot tawa/pan
- After a minute, gently remove the foil without breaking the roti

- Drizzle oil, cook on both the sides on medium heat

- Serve hot with chutney, pickle or curry
