Biscottis are twice-baked cookies. First, you bake them in a loaf shape. While it is still warm, you slice it into diagonal pieces and then place them back down on the baking tray bake again. This dries out the cookies, so that they are mostly crunchy, but with a little give in the middle. They are best served with coffee, and often dipped directly in the coffee.

Ingredients

  • 11/4 cup All Purpose Flour
  • 1/2 cup brown Sugar
  • 1 cup oats
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Baking Soda
  • 2 medium Apples peeled and grated
  • 110 soft Butter
  • 1/4 teaspoon Salt
  • 1/2 cup chopped nuts(Almonds and walnuts)
  • 1 teaspoon vanilla extract
  • 2 Eggs at room temperature

Steps to prepare

  • Preheat oven to 180 deg cel and line baking tray with parchment paper
  • In a bowl, mix flour, cinnamon, baking soda, salt
  • Add oats.  Mix well and keep it aside
  • Blend sugar and butter in a bowl until creamy
  • Add eggs,one at a time and blend until smooth, creamy and pale. Blend for 30 seconds after adding one egg before adding the next
  • Add vanilla extract and blend well
  • Gradually add dry ingredients and mix well
  • Add grated apples and chopped nuts. Fold gently
  • Drop dough onto baking tray and shape like log using spatula
  • Bake for 20-22 minutes
  • Cool for 30 minutes on tray
  • Slice into 1/2 inch diagonal slices
  • Place slices onto baking tray
  • Bake for 12-16 minutes until dry and crispy in preheated oven at 180 deg cel
  • Allow to cool for 15 minutes
  • Cool on wire rack completely
  • Store in airtight container. Serve biscotti with tea or coffee
