Every time I bake a cake, I always check if I can replicate it as Mug cake so the other day when I baked Upside down Pineapple cake, I decided to prepare Microwave, easier and simpler version of it and yes, it did taste amazingly delicious
Since this is microwave 1 min cake , I haven’t done the caramel syrup at the base with the fear that the cake might burn in Microwave and I have skipped it,maybe next time I will try out and check to see how it turns out. Nevertheless this 1 min cake was absolutely a treat

Ingredients
- 3 tablespoons Maida/ All purpose flour
- 3 tablespoons milk
- 3 tablespoons powdered Sugar
- 1/2 tbsp Pineapple thinly sliced chunks
- 1 teaspoon Pineapple juice
- 1 tablespoons Curd (not sour)/yogurt
- 1/8 tsp Baking Soda
- 1/8 tsp Baking powder
- 3 tablespoons oil
- Pineapple and nuts/cherries for garnish
Steps to prepare
- Mix oil, milk, pineapple juice and curd well in a bowl

- Next add all the dry ingredients – baking powder, baking soda , flour and pineapple chunks and mix well

- Take a microwave safe bowl, grease it and add pineapple in shape of flower or any design. You can add nuts, or chocolate chips too . Since I wanted to use cherry so I add neither of them . Basically this is the design you want on the cake.

- Pour the mixture on this prepared design

- Microwave it for 1 min 30 second. The cake should be ready within 1 min 30 second to 40 second depending on microwave capacity
- Do not remove the cake immediately from the microwave,allow it to remain for a minute or so. Once done, allow it to slightly cool and then invert the cake on the serving plate. I have garnished with Cherries on top. Serve warm
