This is simple, easy to prepare, aromatic , spiced rice with roasted peanuts. This is common rice dish in South of India. This is also one of the go-to lunch box dishes. Whenever I am in a hurry or feel lazy or have left over rice, I sometimes prepare Peanuts Rice. It just needs raita/papad as accompaniment and you have lip smacking dish ready

*You can make this with fresh rice or left over rice. Rice should be cooled before preparing this rice

Ingredients
- 1 teaspoon Oil
- 2 tbsp Peanuts
- 1 teaspoon Urad Dal (Black gram lentils, skinned and split)
- 1 teaspoon Chana Dal (Split chickpeas)
- 1/2 teaspoon Cumin seeds (Jeera)
- 1 teaspoon Sesame Seeds (Til)
- 3 dried Red Chili
- 2 tbsp grated Coconut/desiccated coconut
- 2 cups cooked Rice
- 2 teaspoon Oil
- 6-7 Curry Leaves
- 3 tbsp Peanuts
- 1 teaspoon Mustard Seeds
- 1/2 teaspoon Salt
Steps to prepare
- Heat 1 teaspoon oil. Add 2 tbsp peanuts, chana dal, urad dal and cumin seeds with sesame Seeds and dry red chili

- Saute until aromatic

- Add coconut to the pan

- Roast for a minute and allow to cool completely

- Grind to fine powder and keep it aside

- Heat 2 teaspoon oil in a pan and splutter mustard seeds
- Add peanuts and curry leaves. Roast until peanuts are crunchy

- Add salt and ground masala. Mix well

- Add cooked rice and gently mix

- Cover and Simmer for 2-3 minutes.

- Serve hot with raita/salad
