Samak ka chawal or Barnyard millet is specifically used during fasting days on account of pooja/festivals in India. During fasting time, non veg dishes, rice and all rice dishes, all purpose flour ,wheat flour etc are not allowed . All gluten free flour and millets are only allowed. Among these, Barnyard Millet or Sama (Samvat) is highly nutritious, cheap and ancient grains . These can be used to make pudding, khichdi, pulao , upma etc. The best part is that this dish tastes very similar to Rice kheer

Millets are rich in protein, anti oxidant, gluten free, good for digestion and diabetic friendly. These are very easy to prepare and very filling. You can make these dishes any time.

*I have added both saffron and rose water, you can add either of them or skip both. In addition you can add few drops of Kewra essence , this will further enhance the taste of Kheer

**You can add jaggery/Cane sugar etc to substitute sugar in this recipe. If you are serving them warm, cook until milk thickens. If you are serving this dish cold then stop cooking when milk starts thickening. Samak will absorb milk on cooling so it will become too thick, if kheer becomes too thick on cooling, add little milk to adjust the consistency

Servings: 3

Ingredients

  • 3 cups milk
  • 1/3 cup Samak (Barnyard Millet)
  • 1/3 cup sugar – adjust
  • 2-3 tbsp chopped chasews
  • 1 tbsp raisins
  • 1/2 teaspoon rose water
  • Few saffron strands
  • 2-3 drops Kewra essence (optional)
  • 1/2 teaspoon cardamom powder

Steps to prepare

  • Soak Samak in water for 45 minutes. Drain excess water and keep it aside
  • Boil milk in deep bottom pan
  • Add samak and mix well. Cook over low – medium heat until samak softens (approx 18 minutes). Do stir in between while Samak is cooking
  • Add sugar and mix well. Keep stirring until sugar is dissolved. Do keep scraping the sides while stirring
  • Add saffron, cardamom powder and rose water. Mix well. If serving warm, cook until milk thickens. If serving cold, then cook only until milk starts thickening
  • Finally add cashew nuts and raisins. Mix well
  • Serve warm or cold as desired
