Blondies are similar to brownies except that it’s fudgier and has a blonde colour with butterscotch flavour.It is also called as Blonde brownie. Drool this season over the delish blondies

Now blondies heavily depend on brown sugar to render the flavor so yes do not substitute with regular sugar. These blondies are simple to make and the ingredients are easily found in our pantry. You can also use berries and white chocolate chips too while preparing blondies

When blondies are done, it will will get rich golden shade color and will start to pull away from the pan. When the edges have browned and the centre looks slightly under-cooked, you can stop baking them further. Do not over-bake as these blondies will become hard on over-baking

*I have skipped baking powder in this dish, you can add 1/2 teaspoon baking powder if required. Butterscotch chips can be used instead of Chocolate chips and walnuts

**Eggs make blondies tender and rise a little. If you are a vegetarian ,then you can use commercial egg as replacement or Greek yogurt but then do add baking powder too with yogurt

***Overbaking can make blondies hard so it’s best to keep an eye on blondie after 23rd min

Ingredients

  • 110g unsalted Butter, melted and slightly cooled
  • 1 cup All Purpose Flour
  • 1 Egg or 1/4 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon Salt
  • 1/2 cup roasted Walnuts
  • 1/2 cup chocolate chips
  • 3/4 cup+ 1 tbsp brown Sugar

Steps to prepare

  • Preheat oven to 180 deg cel and line 8*8 inch square tin with parchment paper or you can just grease it. parchment paper helps in easing out the blondies from the pan
  • Add butter and sugar in a bowl
  • Whisk well for 5-6 minutes
  • Add egg and vanilla extract and mix until well combined. If using yogurt as substitute , then add it with vanilla instead of egg
  • Sieve all purpose flour and salt in a bowl
  • Add sieved ingredients to wet mixture
  • Mix until well combined
  • Now add walnuts and chocolate chips. Cut and fold gently
  • Add the batter to the prepared baking tin and level evenly
  • Bake for 23-30 minutes until done. Do not overbake
  • Allow to cool for 30 minutes in the pan
  • Using parchment paper, ease blondies out of the tin. Cool the blondies completely
  • Slice and serve. Tastes best when served with ice-cream and caramel/chocolate sauce
