More healthier twist to traditional Rava dosa which makes it even more nutritious and delicious. Ragi/Finger millet is an excellent source of natural calcium which helps in strengthening bones for growing children and aging people. *Skip green chilies if making for kids. Adding curd is optional but renders better taste to dosa. You need to add sour or slightly sour curd to the batter
**If Dosa/Crepes doesn’t get netted shape on pouring in the pan, just add additional 1/2 cup water to batter and mix well
***Rice flour makes the dosa more crispy so adjust it’s quantity as desired

Ingredients
- 1 cup ragi flour/ Finger millet flour
- 1 cup rawa/fine semolina
- 1/2 cup rice flour
- 1/2 cup curd (slightly sour)
- Water as required
- Salt to taste
- 1/4 teaspoon pepper powder
- 1 green chili finely chopped, optional
- 1 small onion finely chopped
- 1 teaspoon jeera/cumin seeds
- Oil to drizzle
- 1 sprig curry leaves chopped
- 2 tbsp coriander leaves (cilantro), chopped
- 1 inch ginger finely chopped
Steps to prepare
- Mix flours and rawa in a bowl
- Add ginger, pepper, salt, onion, green chilies, curry leaves, coriander leaves and cumin seeds. Mix well
- Add 2-2.5 cups water and curd. Mix well to form lump free batter
- Cover and rest batter for 20 minutes
- Stir the batter well and add water to form thin watery consistency batter
- Heat tawa/non stick pan
- Increase the heat to high. Stir the batter well and pour the batter carefully over the pan.
- Now sprinkle little oil all over dosa
- Over medium heat, cook until base is golden brown
- Flip and cook for another 2 minutes
- Remember to always stir the batter each time while preparing dosa
- Serve hot with green chutney/coconut chutney/tomato onion chutney/sambar or serve them as is without any accompaniments
