Delectable flavours of orange and strawberry makes this amazingly delicious sweet tangy Cupcakes worth a try this winter. Topped with Orange cream frosting and fresh strawberries, these cupcakes are absolutely drool worthy
With winter season on, Oranges feature prominent in all the desserts so I decided to combine Orange and strawberries in these cupcakes and the taste was too heavenly. My kid and hubby started munching on it before I could frost them 😉 so yes I managed to frost only 4 cupcakes 😀

I have used homemade strawberry puree. Instead of blending raw strawberries directly, I have cooked and then pureed it, this gives better texture to baked dishes. You can add or skip sugar while preparing strawberry puree, it’s best to use ripe strawberries for the delicious taste. I have used Zest of 1/2 orange as this gives in right subtle flavour of orange without masking strawberries taste. You can infact make cake from this recipe instead of making cupcakes
Frosting is optional, I love whipped cream frosting better than the butter cream so I have added recipe of whipped cream frosting below. I have used sweetened Orange juice for frosting as this makes it taste better
*If using yogurt as substitute, it should be unsour as we do not want to mask the zesty tangy Orange taste.
**Yogurt or Commercial egg replacer can be used here instead of egg
***All ingredients mentioned in recipe are at room temperature
***For more fluffy and lighter cupcakes, use Cake flour instead of APF

Ingredients
1 cup= 240 ml
For Cupcakes
- 3/4 cup All Purpose Flour
- 1 teaspoon baking powder
- 1/8 teaspoon Salt
- 1/4 cup strawberry puree (store brought or homemade)
- Zest of 1/2 -3/4 orange
- 1/2 cup milk
- 1 Egg / 1/4 cup greek yogurt
- 1/2 cup Caster Sugar
- 110g soft unsalted butter
For Frosting
- 1/2 cup heavy whipping Cream
- 1 tbsp powdered Sugar
- 2 tbsp Orange juice
- 1 drop orange food colouring optional
- Strawberries for toppings optional
Steps to prepare
- Preheat oven to 170 deg cel and line cupcakes molds
- Sieve baking powder, salt and flour in a bowl and keep it aside
- Mix strawberry puree and milk in a bowl and keep it aside
- In a bowl, blend butter and sugar for 4-5 minutes
- Add egg or yogurt or egg replacer and blend until pale and frothy
- Add orange zest and mix well
- Now gradually alternatively add dry ingredients and Strawberry mix and blend until well combined
- Pour batter into prepared cupcakes molds upto 2/3 level Bake for 18-20 minutes until done
- Allow to cool completely. You can prepare Orange butter cream or whipped cream frosting as per taste or skip frosting. I have used whipped cream as I like it more than butter cream
- In a large bowl, beat whipping cream and powdered sugar on medium speed until cream thickens
- Increase speed and blend to form stiff peaks. Add in orange juice and food colouring. Blend well. Refrigerate icing until ready to pipe. Frost cupcakes as desired
- Add strawberry on top. Serve these delicious cupcakes
