Delicious combination of Vanilla and Chocolate flavour in a single cookie make this one of the must-try cookies with a glass of warm milk

Light, buttery, these cookies are really delightful in taste requiring fewer ingredients and besides these are simple to make. You can shape these cookies as desired

I have made Swirl cookies too including checkerboard, here I have shared simple striped form of the same. I will be sharing egg based version shortly. Both egg less and egg based cookies taste almost similar so yes, you can definitely try this recipe if you want it egg free

Since these are egg free cookies, the dough should be handled with care hence it requires mandate chilling before baking. Cold cookies yield better results. You can skip milk wash if required as the dough is quite pliable, I added it for additional softness. This cookies can stay fresh for 1 month if stored in cool dry place in air tight container. You can refrigerate the cookie dough for 5 days and freeze upto 2 months so you can prepare the dough in advance. Go ahead and try this out and let me know the results πŸ™‚

*Add milk to the dough only if it’s crumbly else you can skip it. Milk wash makes cookies softer

**The more time, you bake, cookies would be crisp, do not over bake

***It’s important to chill the dough as mentioned to prevent it from spreading while baking

Preparation time: 20 mins Baking time: 13 mins Total time: 33 mins

Servings: 500 g cookies

Ingredients

  • 150 g soft unsalted butter
  • 150 g powdered sugar
  • 210 g flour
  • 2 tbsp cocoa powder
  • 1/8 teaspoon salt
  • 1 teaspoon Vanilla extract
  • 1-2 teaspoon milk – optional
  • Milk for milk wash

Steps to prepare

  • Blend butter for 40 sec in a bowl
  • Add sugar and blend for 6-7 minutes
  • Add vanilla extract and blend well
  • Add salt and flour gradually , mix well to form smooth dough
  • Divide the dough into 2 equal portions. To the second dough, add cocoa powder.
  • Add milk only if dough is crumbly. Both chocolate and Vanilla dough is ready
  • Divide vanilla dough int 2 parts and chocolate dough into 2 parts. Cling wrap and chill for 2 hours. You can freeze dough up-to 2 months
  • Take the dough’s out and shape them individually with palms into equal rectangles. All the 4 dough should be of equal length and breadth
  • Measure them and slice each rectangle into 3 strips
  • Since this is eggless, we will do milk wash for binding
  • Place vanilla and chocolate strip besides each other and give milk wash to bind them and brush milk on top
  • Place chocolate strip on top of vanilla and vanilla strip on chocolate. Repeat the steps until dough strips are completed
  • Cling wrap the ready dough and chill for 1 hour
  • Preheat oven to 170 deg cel and line baking tray with parchment paper
  • Trim the edges of the dough to get perfect shape
  • Slice the log into 1/4 inch thickness and place on baking tray leaving gap between them
  • Do not discard the trimmed edges, prepare round marbled cookies from them
  • Bake for 12-14 minutes until edges are golden brown
  • Cool the cookies on the tray for 10 minutes
  • Cool it completely on the wire rack
  • Store in air tight container and munch on as desired with a glass of warm milk. Cookie stays fresh for a month of stored properly
