I am sharing here one of my healthy recipes which can be made easily at home.Healthy, delicious, eggless and simple to prepare, this season munch on something nutritious. Enriched with the goodness of Oats, dates, honey and cinnamon, these delightful muffins are definitely a must try

I have used dates puree here as my kid doesn’t like dates and he doesn’t like biting dates so when its pureed and mixed with rest of the ingredients, taste of date simmers down, you can however directly add chopped dates instead of pureeing it. I had prepared these muffins some time ago however since now I am at home and with everyone constantly hungry, I wanted to have them munch on something nutritious , sweet and delicious so I made them again

Definitely try on these muffins and you would love it. You can use egg too instead of yogurt for more airy and lighter texture.

*You can skip sugar/jaggery if required, it just lends additional sweetness to the muffins

**Soak dates in warm water for 30 minutes and then grind to smooth puree. You can use any healthy oil. I have use skimmed milk for preparing muffins

***You can use any variety of Oats to prepare these muffins

Preparation time: 15 mins Baking time: 20 mins Total time: 35 mins

Servings: 6-8 muffins

Ingredients

  • 1 cup whole wheat or Multigrain flour
  • 1/2 cup rolled oats
  • 1/2 cup dates, chopped and pureed
  • 3/4 cup low fat milk/almond milk
  • 2 teaspoon honey
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3 teaspoon healthy oil
  • 2 tbsp yogurt
  • 1/4 cup brown sugar/ cane/coconut/palm/organic jaggery

Steps to prepare

  • Preheat Oven to 170 deg cel and line muffin tray
  • Sieve flour, baking powder, baking soda, salt and cinnamon
  • Add Oats and mix well. Keep this aside
  • In a bowl, mix oil, yogurt, milk and sugar well
  • Add dates and whisk until lump free
  • Add honey and mix well
  • Gradually add these wet ingredients to dry ingredients and mix until well combined
  • Do not over mix
  • Pour the batter into prepared muffin tray and level evenly
  • Bake for 18-22 minutes until golden brown and puffed up
  • Cool for 10 minutes in the tray and then cool for another 10 – 15 minutes
  • These muffins taste best when served warm. Store leftovers in air tight container and refrigerate. Just before serving , warm it up and serve
