Be it festive occasion/ parties /functions, sweets are a must. Be it dessert cravings, then we desire for instant gratification, so let’s make the traditional delicious Kesar peda instantly. There are several variations to this sweet, you can add in dry fruits, rose water, pineapple, strawberry etc. You can skip saffron and add other essences as per the desired taste. Such is the versatility of this sweet

Traditionally pedas are made with mawa/khoyas and require time for cooking the milk. Now I have also shared the instant mawa recipe so you can prepare the Kesar peda in traditional way with the instant mawa too. Pedas are similar to milk fudges and taste awesome, these are generally prepared during festive season/ pooja/good occasions. This is a quick easier way to make the pedas and require fewer ingredients with lesser efforts

The other day was my son’s star birthday so I had planned on cooking special lunch including traditional kheer. I also wanted to make pedas as offering to God however I was running short of time so I decided to make the instant pedas. These are so simple and easier to prepare. This is actually my go-to recipe whenever I want to make pedas in shorter duration. Do try and let me know how it turned out

*Always cook over low heat as condensed milk will easily burn

**Test the mixture for doneness, if it doesn’t stick between fingers or at the roof of your mouth then the peda mixture is cooked.Shape the pedas while the mixture is still warm.

***Unsalted butter can be used instead of ghee. Ghee brings in the traditional taste

Ingredients

  • 1 cup milk powder
  • 1 cup condensed milk
  • 1/2 teaspoon cardamom
  • 1 big fat pinch saffron
  • 1 tbsp ghee/clarified butter
  • 3 tbsp warm milk
  • Kesar Food color – optional

Steps to prepare

  • Soak saffron in warm milk for 30-45 minutes
  • Heat ghee in a deep bottom or non stick pan
  • Add condensed milk and milk powder. Over very low heat , mix until lump free
  • Cook the mixture for 7-8 minutes
  • Add cardamom powder and saffron milk
  • If you desire the saffron color of market based pedas, then you can food color , this is optional
  • Mix well and cook until mixture starts leaving sides of the pan
  • Take a small pinch of the mixture. Check between fingers or taste it, it should be non sticky. If it’s sticky then it needs further cooking.
  • Transfer the mixture to greased plate/bowl. Allow to cool slightly
  • You need to shape the pedas while the mixture is still warm
  • Grease your palm with ghee, pinch a small portion from the mixture and roll it into Peda shape
  • I had moulds so I stamped the top with it, you can design the top as required and garnish with silvered almonds, pistachio and saffron if desired.
  • Store in air tight container and consume within 2 days. Delicious instant Kesar pedas are ready
