Rich in aroma, melt in mouth, creamy, delightfully flavoured with cinnamon and cardamom, these delicious eggless cookies are simple to make requiring fewer ingredients from the pantry an absolutely tasty. These are definitely addictive, my cookies disappeared within 1 hour of baking , you cannot stop munching on after a single bite

These cookies are tender and can be munched as-is or with cup of tea/coffee. I have been regularly baking these melt in mouth cookies when this time I decided to bake them with additional flavour of the spices. If you like the plain vanilla flavour then you can skip all the spices and add 1 -1.5 tsp Vanilla extract. You can also play around with the flavours for these butter cookies

You can easily pipe them in any desired shape, these are crisp at the edges and tender at the center. These cookies are more creamier than shortbread cookies due to its pipable format. They do not contain almond flour like Danish cookies and uses powdered sugar instead. Go ahead and bake these delightful cookies this weekend and let me know how it turned out 🙂

*Since these are eggless cookies, chilling the cookies prevent spreading while baking. You can use cake flour instead of APF and corn flour

**If not preparing the cookies immediately, these can be cling wrapped and frozen in freezer, thaw the cookies before piping and then bake

***If using salted butter then, skip the addition of salt. Using unsalted butter helps in controlling the amount of salt in the cookies

***Cinnamon and cardamom quantity can be adjusted as per taste, in addition rose water and nutmeg can also be added for additional flavour

Servings: 22-24 cookies

Ingredients

  • 100 g flour
  • 105 g soft unsalted butter
  • 1.5 tbsp corn flour
  • 30-40 g sieved powdered sugar
  • 1/4-1/2 teaspoon Cinnamon – adjust to taste
  • 3/4 -1 teaspoon Cardamom powder -adjust to taste
  • 1/4 teaspoon salt
  • 1/4 teaspoon Vanilla extract – optional

Steps to prepare

  • Blend butter in a bowl for 40 seconds
  • Add sieved sugar, it’s essential to sieve the sugar else piping the dough will be tough if there are impurities
  • Blend the mixture for 5-6 minutes
  • Now sieve and add all the dry ingredients (flour, cinnamon, cardamom, cornflour, salt)
  • Mix everything well
  • Add vanilla extract if required
  • Line tray with parchment paper
  • Prepare piping bag with desired nozzle
  • Fill the piping bag with the batter and pipe the cookies on the tray
  • Chill the cookies for 20 minutes
  • Preheat oven to 180 deg cel, do not thaw the cookies. Directly bake them post 20 minutes of chilling
  • Bake for 9-11 minutes until golden brown at the base. The longer you bake, it will be crisp, I prefer my cookies to be melt in mouth. Do not over bake or burn them
  • Allow to cool on the tray for 10 minutes
  • Cool completely on the wire rack
  • Store in airtight container and munch on as desired. It remains fresh for 2 weeks
