Enjoy delectable and healthy Whole wheat Bottle gourd cupcakes any time of the day. Simple and easy to make, this requires fewer ingredients to prepare, this would be equally enjoyed by kids as well as adults

Bottle Gourd (Lauki) is water based nutritious vegetable and often used for making Indian desserts so enjoy this veggie in it’s cupcake avataar

The idea of Lauki cupcakes came to me after I had prepared zucchini brownies. Lauki does not have taste on it’s own and when mixed with cocoa powder, the taste is masked, you might see some grated strands but that’s it.. you cannot detect the taste of the vegetable. I prefer cooking veg with it’s own water, that add to it’s nutrition. I have used whole wheat flour to preserve it’s nutriton

You can use any sweetener of your choice and make it further nutritious. This is one dessert you can prepare it anytime. It tastes awesome and believe me , my kid couldn’t detect the presence of the vegetable so yes do give this recipe a try 🙂

*Grate Bottle gourd(Lauki) and rest aside for 10 minutes, this will cause Lauki to release it’s moisture and mixing the cupcakes batter will become easier

**Add milk only if the batter is too dense

Servings: 4

Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup grated Bottle Gourd (Lauki)
  • 1/3 cup Cocoa powder
  • 1/2 teaspoon Baking powder
  • 1/8 teaspoon salt
  • 60 ml oil
  • 1/2 cup sugar/cane sugar/organic jaggery
  • 1/2 teaspoon Vanilla extract
  • 3 tbsp milk – optional

Steps to prepare

  • Preheat oven to 180 deg cel and line cupcakes tray
  • Add oil, sugar and vanilla extract in a bowl, mix until well combined
  • Sieve cocoa powder, whole wheat flour , baking powder and salt. Add it to the bowl
  • Mix well, it would resemble coarse sand
  • Now add bottle gourd with its liquid, mix well
  • Bottle gourd is water based vegetable and will release water
  • Add milk only if batter is too dense
  • Pour the batter into prepared cupcakes tray
  • Bake for 18-20 minutes until done
  • Cool the cupcakes in the tray for 10 minutes. Cool completely on wire rack
  • You can frost the cupcakes or dust with powdered sugar or munch as is
  • Store leftovers in air tight container, it will remain fresh for 3 days
