What do you do when you have loads of Sweet Lime/Lemon (Mosambi) at home? Sweet Lime juice?? that’s the usual and it’s time to change the routine for here comes the simple and easy to make delectable luscious Sweet Lime pie. Sweet lime (Mosambi) are sweet in taste and sometimes they are even somewhat bland to taste. These fruits do not feel acidic in flavor as compared to lemon and are not sour.However if you squeeze the juice and leave it out for some time, yes, it can become bitter so the juice should be used immediately

When my hubby brought in loads of sweet lime at home, I was bored of the juices and salads when I decided to make something different. I have often baked Key lime pie- both egg based and egg less version, when I decided it was time for the sweet lime pie. The preparation is similar to the key lime pie except that it isn’t tart as the lime pie and is delicious in taste

You can bake the crust in advance and refrigerate for 2-3 days, the filling hardly takes 10 mins to prepare so the pie can be prepared and set overnight too. You can serve them to family and friends easily next day. Now since sweet lime isn’t tart, topping the pie isn’t essential with whipped cream or Meringue cookies but it enhances the taste so yes, the topping is optional but do not forget to use sweet lime zest

You can also make this dessert vegan. Use vegan cookies, nut butter for the crust. While making the filling you can use coconut cream, vegan condensed milk/sugar. For toppings, Vegan Meringue cookies can be used

*I have used freshly squeezed juice (preferred), you can use Market based juices too if you do not have sweet lime at home. If you want a slight tangy taste then yes, you can add 1 tbsp lemon juice to the filling

**I have used sugar instead of condensed milk, you can use only condensed milk or mix of both sugar and condensed milk. Adjust the sweetness as per the sweetness of the sweet lime

***Pre-baking solidifies the crust and allows for easy slicing once the pie is ready to serve.

***If you do not have Agar agar powder, only then use gelatin

Servings: 8

Ingredients

1 cup = 240 ml

For Crust

  • 150 g digestive biscuits or any biscuits of your choice
  • 1-2 tbsp sugar
  • 56 g unsalted butter, melted

For Filling

  • 3/4 cup Sweet lime juice
  • 3/4 cup heavy cream
  • 1 tbsp Cornstarch
  • 1/2 cup sugar/condensed milk – adjust
  • 1/2 teaspoon sweet lime zest – optional
  • 1/4 teaspoon Turmeric or yellow food color
  • 1 teaspoon Agar Agar powder

For Garnish

  • 1/2 cup whipping cream
  • 1 teaspoon Sweet lime Zest
  • Few sweet lime slices

Steps to prepare

  • Preheat oven to 180 deg cel and grease 7 inch pie dish
  • Grind biscuits and sugar to powder , add butter and mix well
  • Transfer this mixture to pie dish and press it on base and sides evenly
  • Bake the crust for 9-10 minutes and set aside to cool
  • In a pan, add sweet lime juice, cornstarch, cream, sugar/condensed milk and turmeric
  • Mix well until lump free. I generally add Agar Agar once the mixture is hot, you can add it at the start too. Optionally you can add in sweet lime zest too
  • Over low medium heat, keep cooking the mixture. Add agar agar and mix well. There should be no lumps
  • Cook until mixture starts to thicken, it will coat on the backside of the spoon
  • Now pour this mixture directly on the baked crust. Refrigerate the pie for 2-3 hours or until set
  • I have used non dairy whipping cream here. Whip the cream to form stiff peaks. If using regular whipping cream then add the icing sugar too and whip
  • Fill the piping bag with whipped cream. Once the pie is set, pipe the desired design on top
  • Alternatively decorate the top of the pie with Meringue cookies too
  • Sprinkle sweet lime zest on top. Slice and serve
  • Store leftovers in refrigerator and consume within 5 days
