These are quite simple and easy to make and require fewer ingredients from the pantry. They are quite delicious, addictive and irresistible. Blondies are also sometime called as “Blonde Brownies”

I had made Peanut butter blondies with egg in the past so I wanted to make it this time with eggless version. Now replicating the texture with eggless wasn’t as easy as I thought. The quality of peanut butter also plays an key important role. During the lockdown, the peanut butter I purchased didn’t give me the desired results so it’s best to use the brand and quality you trust.

I did it with flax egg but found it too gooey so I looked for next alternative yogurt/fruit puree. Now since I keep receiving the request that they wanted eggless but without curd/buttermilk/yogurt so I decided to try out with fruit puree. Now banana and peanut butter is awesome combo and I had tried it with brownies already so the next was condensed milk. I had to do this 3-4 times to get the ingredients right. Each time , though the taste was good, it had cakey, gooey texture or was quite sweet so yes, began my journey of experiments to get it right with condensed milk.

Now why both sugar and condensed milk? Peanut butter is quite dense and Condensed milk though liquid has lesser moisture so Brown sugar does the trick, now I was not in favor of increasing condensed milk and reducing sugar as I found the blondies quite sweet. Brown sugar and condensed milk on baking caramelizes well to give it right flavor without obstructing with the delectable peanut butter taste. Condensed milk and baking powder gives in the right texture as egg replacement.

I liked my blondies plain as I wanted nothing to get in the way of peanut butter flavor, but yes you can add in any add on to the blondies as desired

Notes:

*Condensed milk cannot be reduced or substituted in this recipe. Brown sugar adds in the moistness along with condensed milk so do not substitute brown sugar with white sugar

*Blondies should not be baked to perfection like cakes, it should be baked until just set. It will bake further due to heat even when taken out from the oven

**Crunchy or creamy Peanut butter can be used. Use good quality peanut butter only. Optionally, you can add chocolate chips/walnuts/pecans etc. to the blondies

***Always slice the blondies when cooled completely, no matter the temptation. It will fall apart if sliced when warm. It tastes awesome when peanut butter blondies are cooled for 6-7 hours this will allow flavors to set in completely

Servings: 16 squares

Ingredients

  • 120g flour/Maida
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 110g soft unsalted butter
  • 110g creamy peanut butter
  • 6 tbsp. brown sugar
  • 1 teaspoon Vanilla extract
  • 100g condensed milk
  • 4 tbsp. chopped walnuts/pecans/chocolate chips – optional

Steps to prepare

  • Preheat oven to 180 deg cel and line 7 inch square tin with parchment paper slightly overhanging such that you can easily slide the blondies from the pan
  • Sieve flour, baking powder and salt in a bowl and keep it aside
  • Melt butter in a bowl. Butter should be slightly hot
  • Add sugar and vigorously mix until well combined
  • Add vanilla extract and condensed milk. Mix well
  • Now add peanut butter and mix well
  • Add dry ingredients and mix well
  • You can optionally add choco chips/walnuts/pecans etc and mix
  • Add batter to prepared pan and level evenly
  • Rest on the counter for 5-7 mins
  • Bake for 20-25 mins until just set.
  • Do not overbake else they will dry out
  • Toothpick inserted into center can have crumbs but no batter
  • Cool for 15 mins in the pan , now cool completely
  • Peanut Butter flavor enhances when cooled for 6-7 hours
  • Slice with sharp knife into squares
  • Store in air tight container at room temp , it will last up to 1 week
  • Munch on as is or serve with caramel sauce and/or ice-cream
