Enriched with the goodness of Honey, Oatmeal, Spices, Nuts, Whole wheat flour, this is one cake you can munch on anytime guilt-free when hunger pangs strike. Now healthy needn’t be boring always so yes, this cake is perfectly delectable, nutritious and filling. So, this cake is definitely worth a try

I had baked this cake in the past with eggs. Eggs acts as perfect binder, provides in right moisture and acts as leavening agent so when this festive season I had to do eggless cakes, I decided to bake this one minus eggs. Now I wanted to use fruit purees or flax eggs as replacement so I decided to try them one by one, but then the cake became dense if they are used in larger quantities so I reduced the quantity and found fruit purees are the best replacement as they bring in additional flavor and sweetness

Now while doubling this recipe, you can double the fruit puree quantity too but if you want lighter crumb then its best to use fruit puree + yogurt combination

I wanted to make this cake as healthy and nutritious as possible, hence each ingredient had been carefully selected and measured for the right taste, nutritious value and texture. Notes:

*You can use only instant Oats for this cake but I would recommend adding both as it brings in right flavor to the cake and makes it more nutritious

**If you desire cake to be more sweet, increase the amount of honey, but adjust other wet ingredients accordingly

**If you wish to double the recipe then double all the ingredients except banana. Instead of 1/2 banana use 1/2 banana + 1/4 cup whisked yogurt while doubling the ingredients

***Always use ripe bananas, level and spoon baking powder , use wheat flour which hasn’t expired and measure them before use

Servings: 4-6

Ingredients

  • 85g Whole wheat flour
  • 1 teaspoon Baking powder
  • 1/8 teaspoon salt
  • 1/4 teaspoon Cinnamon
  • 1/4 teaspoon Ginger powder
  • 1/2 teaspoon Vanilla extract – optional
  • 90g Honey
  • 50g Instant Oats
  • 40g Rolled Oats/Steel Cut Oats
  • 1/3 cup Chopped Nuts and Berries (Almonds, Walnuts, Raisins, Cranberry, Blueberry etc.)
  • 150 ml Low fat milk/Soy milk
  • 3 tbsp Coconut Oil
  • 1/2 of big ripe Banana

Steps to prepare

*Always read the notes before preparation

  • Preheat oven to 180 deg cel and line 5″ -6″ inch cake tin
  • Sieve flour, baking powder, salt, cinnamon and ginger powder. Add both the oats and mix well. Keep this aside
  • Mash banana nicely in a bowl. To this, add honey , oil and milk. Mix until well combined
  • I have skipped Vanilla extract, you can add if desired
  • Now gradually add dry ingredients and whisk until just combined
  • Fold in chopped nuts and berries gently
  • Pour the batter into prepared cake tin and level the batter. You can add additional nuts on top if desired
  • Tap the cake tin on the counter several times
  • Bake for 20-25 mins until done. Do not overbake else the cake will become dry
  • Cool the cake in the tin for 10 mins and demould it
  • Now cool the cake on the wire rack
  • Slice and serve as is. Or top with honey/maple syrup and serve
